OUR STORY.

We developed our Original Garlic-Lemon Aioli sauce to complement the fries we sell at local San Diego Farmers Markets. We wanted something new and unique, packed with flavor, in short we aimed to make a condiment so distinctive and so extraordinary that it would make our fries a one-of a kind experience our customers could not easily forget.

And we did! As we are reminded time and time again by our customers, happiness on a beautiful weekend morning is as simple as a perfectly golden fry dipped in a dreamy Garlic-Aioli sauce!

And it is our customers’ encouragement and support that gave us the idea to bottle it. Sounds simple, right? Wrong! It took us three years to find the right ingredients to develop a sauce that comes out of a jar with the same freshness and full flavor as the original home made.

To make it even more special we decided that it had to be ORGANIC, (because we are fed up with eating pesticides), NON GMO ( because we believe that what we eat should resemble what our forefathers used to plant and eat) and of course GLUTEN FREE for everyone to enjoy! No artificial flavors, no colors and no preservatives. That’s what our Super Sauces are all about.

To satisfy all the foodies out there that like a little heat with their food, we developed a Sriracha –Garlic Aioli that is just perfect! We called it #2. It has the bold flavor of our Original Garlic Aioli with just enough Sriracha to make it mouth watering and full of taste. A blend of tomatoes and pepper were added to give it an intense, flavorful component.

Why did we call it Super Sauce No.1 and Super Sauce No. 2? We wanted a name easy to remember, but most of all because these sauces are really SUPER! Like the Marvel Super Heroes, they are the super heroes of our kitchen. They are versatile and will transform even the most boring –everyday- run of the mill sandwich or dinner into something tasty and delicious. (Sorry… they don’t do dishes!)

Use them as an appetizer dip for fresh vegetables and chips or as a marinade for fish and meats. They will transform your hamburgers into a gourmet feast, and enliven a dull meatloaf. A dab mixed with your usual salad dressing will add a unique garlic flavor, and baked potatoes will never be the same! Wherever your gastronomic fantasy takes you they will be a complicit partner to success. Fish tacos… shrimps… sautéed veggies and chicken…garlic bread, you name it!

So go ahead, be bold, with Super Sauce #1 and Super Sauce #2.

Fries.

Fries are an intrinsic part of Belgian culture, just like chocolate, monk beer, and waffles. You can find fritkots on almost every street, and on a cold rainy day (as it often the case in Belgium), a cone filled with hot, crispy fries may just bring the only ray of sunshine to your day.

What’s the secret of our delicious fries?

They are fried twice!

The first frying is in low temperature oil, where the fries are cooked through but not browned; then, they are removed from the fryer, drained and allowed to cool. The second frying is at a higher temperature for a few minutes. The result is a perfect golden fry, creamy on the inside, crisp on the outside.

We start with high quality, fresh -not frozen!- Kennebec potatoes, they are peeled and washed to remove impurities. No additives, no chemicals, no coatings, just fresh, gluten free potatoes. The most important part, though, is that we cook your order as you wait and because of this, you are always guaranteed a hot and delicious treat. We serve them in the traditional paper cone, and you can enjoy them with a variety of dipping sauces: ketchup, mayo, malt vinegar or our homemade garlic Aioli sauce.

Waffles.

Belgium is famous for its chocolate, monk beer mussels, fries and waffles!

There are two types of waffles typical of this wonderful country: the Brussels style waffle, (made with a batter similar to pancakes), and the Liège waffle, also known as sugar waffle (made from dough with yeast) which is dense and much sweeter.

The key element of the Liège waffle is the caramelized pearl sugar that softens under the heat of the iron when prepared, giving the waffle a sweet and fragrant exterior. 
Pearl sugar is a specialty sugar from Belgium. Made from sugar beets, it is not completely round, but comes in chunks of different sizes. The most remarkable thing about pearl sugar is that it does not melt easily when exposed to moisture or to high heat, it caramelizes giving a wonderful texture and taste. Only Belgium produces pearl sugar, and how it is made is a highly guarded secret!

Have you ever tasted a Liège waffle made with pearl sugar? 
It is buttery and fragrant, it melts in your mouth… it is simply delicious!

When we make our Liège waffles, we use only fresh ingredients: flour, eggs, butter, pearl sugar (imported from Belgium), milk, yeast and a pinch of salt, then follow the original recipe that was perfected with the help of Nicholas Berger, the Executive pastry chef for a famous restaurant in Paris. Nicholas also recommended that the waffles be frozen immediately to retain the flavor and texture. At this time it takes about 4 hours to make 100 waffles, a long process, but well worth the effort.

Don’t be fooled by imitations! Many of the so-called Liège waffles are made using batter, not dough, and most others are made with imported frozen dough that is full of industrial substitutes, additives, preservatives and colorants. The result is a mediocre and stale waffle that has lost its magic!

Not our waffles! In San Diego, we are the only ones to offer Liège waffles made with fresh ingredients!

Although a Liège waffle is mouth-watering on its own, we add a variety of toppings to make it even more delicious: fresh strawberries, bananas, Nutella, powder sugar, whip cream… just to mention a few. Our customers enjoy creating their own waffles. Children love piling them up with whip cream!

No.1 Garlic-Lemon Aioli

This Garlic-Lemon Aioli is not shy!

It has a little of a tang from the lemon and a whole lot of bold garlic and pepper flavor, but at the same time it is creamy and smooth and will add a tasty dimension to any food it is added to.

It is ORGANIC, (because we are fed up with eating foods full of pesticides), NON GMO(because we believe that what we eat should resemble what our forefathers used to plant and eat) and of course GLUTEN FREE for everyone to enjoy! To satisfy all the foodies out there who like a little heat with their food, we developed a Sriracha –Garlic Aioli that balances the heat of peppers with the strong flavor of garlic. We called it No.2.

We merged the bold flavor of our Original Lemon-Garlic Aioli with just enough Sriracha to make it mouth watering and full of taste. A blend of tomatoes and pepper were added to give it an intense, flavorful component.

Like Our Original Super Sauce No.1,it is ORGANIC, (because we are fed up with eating foods full of pesticides), NON GMO (because we believe that what we eat should resemble what our forefathers used to plant and eat) and of course GLUTEN FREE for everyone to enjoy!
